12 avocados 1/2 of a large red onion diced 1/2 cup fresh cilantro chopped 2 or 3 jalapeños diced Salt to taste (approx. 2 tbsp) 3 limes (juice only)
Slice each avocado in half. Remove the skin and place halved avocados in a mixing bowl. Save 3 or 4 pits for later.
Gently mash up the avocados with a potato masher or your hands (vinyl kitchen gloves are encouraged if you use your hands).
Fold in all other ingredients. Feel free to use more or less of the onion, cilantro, salt and jalapeños to your preference. I’d definitely juice three limes though.
Put the guac in a serving or covered storage bowl with 3 or 4 pits to help it stay green (thanks William for the great tip). Enjoy!
if storing overnight, cover guac tightly with plastic wrap to keep out as much air as possible. If it turns a little brown, give it a quick stir.
